This is a salad from Day 11 of the Beachbody Ultimate Reset. I liked it so much that I thought I would share the recipe with everyone. I will definitely be making this again after the Reset is over! For those of you that grow cucumbers and tomatoes in your garden this would be a great recipe for you to make during the summer and to give out to friends and family along with your bounty of vegetables!
Cucumber and Tomato Salad
1/2 large cucumber cut in bite-size pieces
1/4 small container cherry tomatoes cut in half
1 TBSP chopped red onion
2 TBSP rice vinegar
1 TSP balsamic vinegar
1 TBSP lemon juice
2 TSP extra virgin olive oil
1 TBSP chopped fresh parsley
1 TBSP chopped fresh basil leaves
Himalayan salt (to taste)
The original recipe called for 1 English cucumber which I didn’t have so I just used a regular cucumber. You may need to adjust how much cucumber you need based on the size of the cucumber that you have. 🙂 The original recipe also called for red wine vinegar which I didn’t have so I used rice vinegar instead.
