In an effort to become more consistent with my weekly meal prepping I thought it might be fun (and hopefully helpful!) to share some of my favorite recipes and routines.
Here’s the shopping list I shared for my first meal prep on my Facebook page a few days ago in case you missed it.

Breakfast
Lunch
Cucumber and Tomato Salad
Mix together and divide evenly into 4 storage containers:
2 cucumbers (diced)
2 pints cherry tomatoes (halved)
1/4 cup chopped red onion
1 can garbanzo beans (rinsed)
handful of parsley (chopped)
optional protein boost: 1/2 cooked chicken breast (diced)
Before eating add 1 TBS light dressing
Dinner
Mango Chicken with Zucchini and Yellow Squash
Meal prep 3 whole chicken breasts in the crock pot (or use your preferred method).
Slice two zucchini and two yellow squash into slices and saute’ in 1 TBS coconut oil and season with all-purpose Mrs. Dash. When chicken is cooked through divide evenly into 4 containers and top with 1 TBS mango salsa. Save extra 2 chicken breast halves and use for salads.
