Vegan French Toast

vegan french toastI just wanted to share what I made for breakfast today as it was AH-mazing!! I don’t even remember where I saw the recipe originally, but it was simple enough that I remembered how to make it without even writing it down. HA!

First, I toasted two pieces of Ezekiel bread (you can use whatever kind of bread you like) and then dipped each slice in lite coconut milk followed by another dip in organic unsweetened coconut flakes.

Then I prepared the French toast on the stovetop as usual using a bit of coconut oil. I topped with just a wee bit of pure maple syrup (agave nectar would probably be good too) and berries. YUM!!! I will have to figure out the nutrition info for this because I will definitely be making this again!

What do you think…will you be giving this a try? Easy enough right?
