Happiness is…when you don’t have to worry about cooking dinner for the rest of the week! I love recipes that are simple, healthy, and delicious and these turkey meatloaf muffins definitely fit the bill. There’s only FOUR ingredients! You can totally handle that right?!? 🙂
I’ll whip up a batch of these on a Sunday night and my husband and I are set for dinner for the rest of the week. You can easily double this recipe if your family is bigger than mine and feel free to use standard muffin tins or the jumbo size.
INGREDIENTS
1 package (~1 lb) lean ground turkey
1 cup old-fashioned oats
1 egg, scrambled
3/4 cup of your favorite fresh salsa (I like the Garden Fresh brand since it’s made in Michigan!)
I recommend checking the label of your salsa and making sure it doesn’t have added sugar listed in the ingredients. Also, if I have extra chopped up veggies on hand I’ll throw some of those in there too…typically onions and green peppers. There’s lots of flexibility here so feel free to experiment!
DIRECTIONS
Mix all the ingredients together and divide evenly into a muffin tin. If the mixture seems a little bit too dry you can add more salsa. Cook at 350 for about 25-30 minutes or until cooked through. You may need to cook a little longer if you’re using a jumbo muffin pan. You can spray the muffin tin with non-stick cooking spray (I like coconut oil spray) or for super simple clean-up you can use muffin liners.
I typically serve these with two cups of steamed veggies or coconut-collard greens (recipe coming soon!)

VARIATIONS
A slight variation to this recipe are the turkey meatballs. Kids LOVE these things! The ingredients are exactly the same but you can change them up from week to week by using different seasonings.
