Turkey Meatball Meal Prep

Guess what…this recipe only has FOUR INGREDIENTS! Isn’t that exciting! Well, technically SIX if you count the additional seasonings if you choose to add them but still…I love simplicity! Plus, who doesn’t love eating finger food? Finger food is FUN!

Turkey Meatball recipe

INGREDIENTS

1 package lean ground turkey (93% Lean 7% Fat)
3/4 cup fresh salsa
1 cup old-fashioned oats
1 egg, beaten
additional seasonings (optional)

OK, so what do I mean by additional seasonings? Well, there’s a few different ways you can make these to change them up a bit. I’ve made them without the seasonings several times and they’re still delicious but the additional flavors will kick up the flavor just a notch.

Here’s a few different variations you can experiment with:

Option #1 (my personal favorite)
1 tsp cumin
1 tsp chili powder

Option #2
1 TBS chopped fresh basil (or 1 tsp dried)
1 tsp fresh lemon zest

Option #3
1 TBS Worcestershire sauce
2 TBS fresh parsley

Option #4
2 tsp hot sauce
1/2 tsp curry powder

Option #5
1 chopped fresh chipotle chile
2 TBS chopped fresh cilantro

Option #6
2 tsp chopped fresh jalapeno pepper
1/4 cup finely chopped jicama

DIRECTIONS

1. Preheat oven to 400 degrees. Lightly spray a large baking sheet with cooking spray or cover with parchment paper.
2. Mix together all ingredients in a large bowl.
3. Roll mixture into 30 1-inch meatballs and place on the cookie sheet. If you have one, a melon ball scooper works GREAT!
4. Bake for 15-20 minutes, or until no longer pink in center.

Divide into 5 servings, 6 meatballs each and serve with your choice of steamed veggies. I like green beans! For easy meal prep you can use frozen veggies and once you’re ready to eat they’ll already be thaw and all you have to do is heat up your meal in the microwave.
