Today we’re going to learn how to make the homemade dressing for our Super Salads.
Now, keep in mind that making the dressing is TOTALLY OPTIONAL if it seems like too much work. But I would encourage you to give it a try. This particular dressing goes extremely well with this salad. I’ve tried other dressings (both homemade and store bought) and I didn’t think they were nearly as good.
If for some reason you decide not to make it, you can use any type of light vinaigrette dressing. Just make sure the dressing is NOT fat free or calorie free. You also really want to be careful with your serving sizes. 2 TBS is all you need!
I use the small container from my Magic Bullet bullet to make homemade dressing. It works great!! Once the dressing is made I just put the lid on the container and it’s ready to go in the frig. However if you don’t have a little blender it’s not a show-stopper…you can always use a regular blender or just wisk the dressing by hand. The first few times I made this dressing I just used a wisk. However, if you do it this way you have to make sure that you dice up the garlic cloves and parsley as fine as possible.
Ingredients:
½ cup extra virgin olive oil
¼ cup apple cider vinegar
3 TBS Lemon juice
1/2 tsp Dijon mustard
2 TBS Fresh parsley
3-5 Fresh garlic cloves
1 TBS Agave nectar or raw honey
1 tsp Himalayan or sea salt
Make sure for the parsley that you only use the leaves and not the stems. I typically just throw in a handful and call it good! Also, if you’re purchasing agave nectar (I think it’s a little easier to use vs. honey) make sure that the only ingredient on the label is AGAVE NECTAR.
That’s it! This dressing will last for a week in the frig and you’ll want to stir it up a little bit before you use it each time. If for some reason it solidifies a little bit while it’s in the frig don’t freak out! 🙂 Just set it out at room temperature for a few minutes and it will go back to normal.

Like I mentioned before, the main thing is that you stick with 2 TBS for your serving size. It doesn’t seem like a lot, but it really goes a long way! And it’s usually best if you don’t add the dressing until right before you eat your salad. You can use a really small plastic container to transport your dressing, or if you’ve done the 21-Day Fix the orange container was specifically designed for dressing.
If you like to have something tangible to refer to while you work in the kitchen I made a PDF which includes a quick summary of the past two lessons and also includes a grocery list.
You can download that here:

And feel free to save this image or take a screenshot if it’s easier for you to have a grocery list on your phone.

YOUR HOMEWORK ASSIGNMENT
It’s time to plan ahead!
1. When are you going to go shopping for your ingredients and when are you going to prep your salad and dressing? Be as specific as possible and include the day and time. Find out what works best for your schedule and write it down somewhere…on your calendar, planner, etc. It’s very important that you schedule this time for yourself in advance just like any other appointment and stick with it.
Once again, if you’re GOOD TO GO pat yourself on the back or if you still have question(s) please post them in the Facebook group.
