I’m so glad you made it! I hope you had as much fun going through all the lesson as I did putting them together.
Any time you feel like you need to go through the material again here’s a link where you can access all of the lessons in one place:
Super Salad Reset Lesson Archive
As good as the salads were that you made this week I know you might want to change things up every once in a while. So I wanted to share a couple more of my favorite salad recipes with you.
NOTE: To turn any salad recipe you find into a weekly prep you’ll want to multiply the ingredients by at least 4 or 5. Typically, 1 pound of greens can be divided into 5 servings, so you can use that as a baseline when you’re prepping any type of salad. Of course it’s not an exact science, so if things don’t turn out quite evenly, you can always eat your mistakes. 🙂
Greek Salad Jars

I love these! And seeing the picture here now reminds me that I need to make them more.
For this particular salad it’s important to build from the bottom especially when you’re dealing with things like beets! 🙂
Each jar contains (starting from the bottom):
- 2 TBS Greek dressing
- beets (as many as you want…you can never have too many beets!!) Fresh beets are awesome but if I’m pressed for time I typically divide up 1 can of sliced beets evenly into all the jars
- cucs (about 1/3 cup)
- tomatoes (about 1/4 cup)
- 1 TBS low fat feta cheese
- chicken (about 3-4 oz or 1/2 cooked chicken breast)
- romaine lettuce (just shove it in there until you can’t fit any more!)
optional: 1/2 cup chickpeas
Strawberry + Chicken Salad

I’ve never prepped this salad but if you wanted to it would probably be pretty easy!
This one includes:
- Romaine lettuce
- 3-4 oz or 1/2 cooked chicken breast
- 1 TBS low fat feta cheese
- 2 TBS pecans
- 1/2 cup sliced strawberries
- 2 TBS light raspberry vinaigrette dressing
If you want to make the dressing this one is really good!
INGREDIENTS:
1/2 cup fresh raspberries
1/4 cup red cider vinegar
juice from 1/2 lemon (or 1 TBS lemon juice)
1 TBS agave nectar (optional)
pinch of Himalayan or sea salt (optional)
DIRECTIONS
Mix all ingredients together in a small hand-held blender and store in the refrigerator. Best if used within 7-10 days. Makes a little less than 1 cup.
Kale Salad Jars

One day I was waiting in line at the Meijer deli and I saw a similar salad in the display case. I thought to myself, “Hey that looks good! I could totally make that!”
For this particular salad I just mix all the ingredients together in a really big mixing bowl and then divide evenly into 6 wide mouth 1 quart mason jars. And no dressing is needed! But if you feel like it still needs something…a light balsamic vinaigrette would probably be your best option.
INGREDIENTS
1 bunch green kale (PLU#4627), stems removed
2 TBS extra-virgin olive oil
juice from one fresh lemon
1 tsp sea salt or Himalayan salt
1 bag (12 oz.) broccoli cole slaw mix
1 bag (10 oz.) shredded carrots
1 pint cherry tomatoes, quartered
1 package (6 oz.) edamame, shelled*
5 oz. reduced sugar dried cranberries
1/2 cup toasted cashews
*If you’re avoiding soy (edamame), you can use chick peas or white beans instead (1 can, rinsed).
DIRECTIONS
1. Pull kale greens off the stems and place in a colander. Rinse and pat dry with a paper towel. Place the greens in a large, sturdy bowl. Add EVOO, lemon juice, and salt. Use a pizza cutter to chop up the kale into bite-size pieces. If you don’t have a pizza cutter, you can massage the kale with your hands and continue to break it up into smaller pieces.
2. Add slaw mix, carrots, tomatoes, edamame, and cranberries.
3. Divide the mixture into 6 equal servings. It should work out to about 3 cups each.
4. Before eating, add 1 TBS toasted cashews.

YOUR HOMEWORK ASSIGNMENT
That’s it folks! For your last day I just want to give you the opportunity to share your thoughts and experiences with the RESET. Take a few minutes to sit back and reflect on the past 10 days.
A few questions to consider:
Did you love it? Hate it? Would you recommend it to a friend? What was the most useful thing you learned? Are you a better person TODAY than you were 10 days ago? Which lesson resonated with you the most? Was it too much material or not enough?
And most importantly…will you keep going?
I’m interested in hearing your feedback so I can create the best experience for future participants! You don’t need to answer ALL the questions…those are just some ideas to get the thoughts brewing. 🙂 You can post your feedback in the Facebook group or use my contact form if you prefer to share your thoughts privately.
It was sooooo fun working with you and I look forward to seeing you CRUSH your goals!!
