This recipe was first introduced to me by one of my challenge group participants a while ago and I’ve been addicted to it every since. I can seriously eat this thing every day. I’ll get sick of it for a week or so, but some how or another it always makes it way back into my weekly menu. Mostly because it is delicious, healthy, and so stinking easy to throw together when you’re in a hurry!

It’s pretty simple, but here’s what you need to throw this thing together:
– wrap of your choice (or you can omit the wrap altogether. I like to use the Latortilla Factory Low-Carb High Fiber wraps which I can only find at Meijer for some reason).
– frozen veggie burger of your choice (or you can make homemade black bean burgers from scratch, which would be pretty awesome of you…but since this is a ‘quick and easy’ meal, you might want to skip that part. I really like the Morningstar Spicy Black Bean burgers. I’m not big on spicy, so if I can handle ’em they really aren’t that bad).
– fresh spinach leaves
– sandwich sprouts
– your favorite salsa (I like Garden Fresh Gourmet which is a local brand here in Michigan).
– crumbled low-fat feta cheese
Throw (or gently place) your frozen veggie burger in the toaster. While that’s getting nice and toasty lay out your wrap and cover it with a nice layer of spinach and sprouts. When your burger is done, place it in a bowl and smash it all up with a fork. Then add about 2 tablespoons of salsa and 1 tablespoon of feta cheese and mix together with the burger. Place the mixture on top of your greens, roll up the wrap, and enjoy your meal!
Sometimes I’ll eat this with a side of fruit, cucumber and tomato salad, or cottage cheese. Feel free to omit the wrap if you want, and just eat the whole thing like a salad. That works too!
