Oatmeal Waffles = YUM!! This recipe is great if you are sensitive to gluten or just want a healthier version of what you can get out of a box. You can also use this recipe to make pancakes if you don’t have a waffle maker!
Ingredients:
2 cups oats
1/2 cup flour (any flour works but I used coconut flour)
1 TSP salt
1 TBS baking powder
1.5 cups water
1 beaten egg (or 1TBS ground flaxseed + 3TBS water)
1 TBS pure maple syrup
5 oz (a little more than 1/2 cup) unsweetened applesauce
1. Place oats in food processor and grind for a couple minutes until you get a fine powder. Congratulations, you just made oat flour!
2. Pour the oat flour into a large mixing bowl and add the rest of the dry ingredients.
3. Add wet ingredients. Depending on the type of flour you used you may need to add more water than what the recipe calls for. Gently fold and mix the ingredients by hand. Continue to add water and/or almond milk until you get a consistency thin enough to pour into your waffle maker.
4. Top with your favorite condiments: applesauce, jam, peanut or almond butter, bananas, fruit, etc. I prefer blueberries and pure maple syrup. 🙂
