Homemade Protein Energy Bars

Here’s a recipe for homemade protein energy bars that I wanted to share with you! I’m a big fan of protein and energy bars like Clif Builder Bars (chocolate!) and P90X bars but one thing I don’t care for is soy protein isolate which many of these bars contain. I’ll let you do your own research on that…anything in moderation is typically OK but if I can make something at home from scratch I would much rather to do that!

The first time I made these I only used 1/2 recipe cuz I really wasn’t quite sure how they would turn out…and Shakeology is too expensive to waste! But no worries here…I will be making a full batch from now on! I like to use these as a reward for working out or going for a long run. Although I admit I did have one of these for breakfast on Sunday and I got through church with no stomach grumbling and didn’t even feel all that hungry when it was time for lunch!

You could probably adapt these a bit and use PB2 instead of your favorite type of peanut butter (I prefer natural) or even use something like unsweetened applesauce or banana instead of the coconut oil. You can use whatever chocolate protein powder you like best. I prefer to use Shakeology because it contains *so* much more than just protein, has no artificial ingredients and I can recognize and pronounce all the ingredients on the bag!

After mixing this up you’ll want to press the mixture into a square dish and cut into whatever size squares you want (just a couple bites are very filling!). Put the dish in the frig for about an hour and then bring back to room temperature for about 5 minutes before eating. If you don’t keep them chilled they will fall apart easily!
