I found a recipe for homemade granola on Instagram that I tweaked slightly. This was my first time making granola and I was surprised how easy it was. I’m sure you could experiment with this depending on whatever you have hanging out in your pantry. Just make sure your bananas are fairly ripe for this one. I used vanilla protein powder only because my vanilla Shakeology hasn’t arrived yet!
Mix together dry ingredients:
1.5 cup oats
1/2 cup chopped or slivered almonds
1 packet or 1 tsp. stevia (optional)
1 tablespoon chia seeds
1 scoop vanilla protein powder or Shakeology
3 TBS raw pumpkin seeds
You’ll also need:
1 tablespoon coconut oil
1/3 cup raw honey (I used raw agave nectar which isn’t as good but I’m trying to get rid of it)
1 medium-size ripe banana
Melt the coconut oil and then add the banana. Mash it into the oil and blend together. Add the honey and continue to mash the banana until most of the chunks are gone. Stir for a few minutes and bring to a light boil. Pour onto the dry ingredients and mix well. Pour the mixture onto a baking sheet or glass casserole dish and keep it kinda chunky. Bake at 325 for about 20 minutes until it starts to turn golden brown. Let cool for a few minutes (if you can stand it) and then enjoy! Because of the coconut oil it holds together better if you store it in the frig.
