Coconut Collard Greens

Roasted beets with Coconut collard greens

If you’re tired of broccoli, this is a good way to change things up and is super-simple too!

Coconut Collard Greens

1.5 tsp. extra virgin olive oil
1/4 yellow onion
1/2 bunch collard greens (washed and stems removed), cut into 1/2 inch strips
1/4 cup coconut milk
1/8 tsp. Himalayan salt (optional)

Heat oil in skillet over medium-high heat. Add onion and saute a few minutes until soft and golden brown. Add collard greens and stir well. Add coconut milk and stir. Saute another 5-10 minutes or until greens are very tender. Add salt if desired. Serves 1.
