Clean Egg Salad

I’m all for CLEAN EATING but I have to admit when I look at some of these recipes I’m like….UGH! The list of ingredients is a MILE LONG and you have to spend who knows how long prepping everything. I know I’m whining, but we need to make eating healthy less complicated especially for all the busy folks out there!

Anyway, that’s why I was so excited to find this recipe for clean egg salad. On a typical day I already have all of these ingredients on hand and it only takes a few minutes to throw everything together. I think next time I’ll omit the celery because I’m not a HUGE fan, but it does add a nice crunch. Curry is optional…some people find it a little too powerful but a little sprinkle is all you need. You could also use paprika instead.

This recipe is pretty versatile too. You can go no carbs and just eat it with a fork, moderate carbs and eat on top of a slice of toasted Ezekiel bread (my preference) or wrap it up in one of those low-carb tortillas. Or you can go all out and make a regular sandwich out of it. 🙂
