Days 3 and 4 of my Beachbody Ultimate Reset journey came with some challenges. Friday is a 10-day work day for me, so Thursday evening and Friday morning I was pretty busy packing up everything I needed to make it through the day. I also had a family function to attend Friday evening that involved a celebration with cake, but it actually wasn’t too hard saying “no thanks” to that. Day 3 I also ate tempeh for the first time and it really isn’t all that bad. I wouldn’t say it’s great, but maybe it will grow on me. Tempeh is a protein made from soy. Since I was at work I just mixed all the ingredients together for the nori rolls and ate them without the wrap.

I enjoyed the breakfast on Day 4…pretty basic stuff. Ezekiel toast, fruit and yogurt. I’m really digging the plain organic yogurt and I’m going to miss it during weeks 2 and 3 when all animal products are eliminated. Or maybe I won’t??

Lunch on Day 4 was pretty crazy….soooo much food! Nori rolls with tempeh and veggies with lentil salad AND a regular salad. I really had a hard time eating everything. I did attempt to wrap the Nori rolls this time! They didn’t turn out that great appearance-wise but they were pretty tasty! I was a little unsure of the Nori (seaweed) wrap but I liked the taste! Definitely not something I would have eaten if not for the BUR! Not a huge fan of the lentil/carrot salad. I think I may have used too much lime juice.

I was so full from lunch that I didn’t have my afternoon snack and by the time dinner came around my husband and I had another family function to attend. I was going to pack up my dinner and take it with me, but since I was still feeling full, I decided to take a Tropical Shakeology with me and have that instead. I just mixed it with water which really isn’t the greatest, but better than nothing. I did end up having a snack before bed.
