Beachbody Ultimate Reset Days 19-21

OK, I know it took me a while to get this last post up! The last three days of the Beachbody Ultimate Reset were pretty uneventful, which I guess is a good thing! Actually, I’ve spent the last few days doing a lot of research and thinking about meals and recipes that I want to make going forward. I think the hardest part of Phase 3 was the lack of protein due to the fact that grains and legumes are eliminated to focus on a more simple, cleansing fruit and vegetable-based diet. There’s an optional grain included with each dinner if you wish to continue grains (which I did when the grain was millet or brown rice).

Also, EVERY breakfast during Phase 3 was fresh fruit. I LOVE fruit, but wow…3 cups of fruit every morning started to be too much. I would rather spread my 3 servings of fruit up throughout the day.

Dinner on Day 19 was another one of my favorites! It was almost an exact repeat of a dinner we had during Phase 2, except for the added tempeh. I even made extra so I would have leftovers for the next day. I wasn’t all that excited about the Dinner on Day 21 so I decided to have leftovers for Dinner on Day 20, and then make that dinner on the last day! If that doesn’t make sense, don’t worry! It’s not considered cheating if you substitute a dinner for another dinner, as long as it’s during the same week/phase. So if you find something completely offensive or disgusting  (like fennel) you can make substitutions.

So anyway, dinner on Day 19 was beets with coconut collard greens and baked tempeh. Instead of marinating the tempeh ahead of time I just threw it in the same roasting pan as the beets. It turned out pretty good and took on the flavor of the beets while it roasted.

Day 20 was basically a repeat of Day 19.  I have to admit, I didn’t make the fancy salads we were supposed to during the last two days and instead ate our standard salad with mixed spring greens. Day 20 lunch was supposed to be Jicama-Avocado salad served over salad greens and Day 21 lunch was a Carrot-Seaweed Medley with edamame. But honestly, after the carrot salad I had a few days ago I still wasn’t ready for more shredded carrots. Day 21 Dinner was AWESOME…stir-fried veggies over brown rice. My favorite part about the stir fry was the bok choy. I know I’ve had bok choy in restaurants before, but I never knew what I was! Now I’ll never make a stir-fry without it!!

So that’s it!! I’ll be writing a separate entry which will include a full review of my experience with the Reset but wow, what a journey this has been! And only 21 days!! In some ways it seems like an eternity…but on the other hand it went by rather quickly! I’m definitely thinking about food differently now. I view it more like fuel rather than something to keep me entertained. I don’t even know if that makes sense. Really, the only way to understand is by experiencing the Reset for yourself!! 😉
