So Week 1 of the Beachbody Ultimate Reset is officially a wrap!! I’ve now been officially “weaned” off all animal products. These are known to put strain on the digestive system, so for the next two weeks I’ll be eating only vegan foods. This will be a first for me!
Breakfast today was oatmeal with ground flaxseed, cinnamon, and apples. Not as good as the oatmeal with walnuts I had earlier in the week but still pretty tasty. I was so distracted this morning getting everything together I had to take to work that I forgot to eat my 1/2 cup of yogurt. Dang it!

Another monster salad for lunch today along with another serving of zuchinni-cashew soup. I definitely like it better cold! Weird, I know! A co-worker also had a good idea to use the soup as a dip for veggies. I bet that would be really good!

For dinner I had another encounter with baked tempeh. This time I eased up on the low-sodium soy sauce and that seemed to help. This time we had baked tempeh with stir-fried veggies and brown rice. I’m still getting used to the tempeh. A friend of mine recommended crumbling the tempeh instead of cutting it into strips. I like that idea! The stir-fry with tempeh was good though. I have to admit…after I got home from work I ate the 1/2 cup of yogurt I was supposed to have for breakfast. My one last fling with dairy for a while! 🙂

Tomorrow I start taking the DETOX supplements three times a day along with the OPTIMIZE supplements. The BUR Detox is not a “take it and run to the bathroom” type of supplement.
