Wow, I guess time flies when you spend all day in the kitchen! 🙂 I’m almost done with my first week of the Beachbody Ultimate Reset. No more chicken, salmon, and eggs. Tomorrow will also be the last time we have dairy in the form of my new favorite…plain organic yogurt.
The day got off to a rough start. I knew I wasn’t going to like this breakfast but I stuck it out anyway. Baked tempeh with kale and toast with avocado. I actually eat toast with avocado all the time so that wasn’t a big deal, but the baked tempeh and kale was a bit of a stretch. I really like kale too, but not for breakfast. Even so, it was much better paired with scrambled eggs. The baked temped was marinated in a type of soy sauce mixed with apple cider vinegar. Maybe that was the problem. My taste buds aren’t quite ready for soy sauce in the morning. Anyway, I’m glad that’s done and we won’t have to see it again any time soon!

Lunch was pretty standard….big salad with toasted cashews and quinoa salad. Lunch was a bit of a challenge timing-wise because work was pretty hectic and I had to shovel down the salads in the 10-15 minutes I had available, not really ideal conditions if you read the Reset guidelines for “conscience eating”. It normally takes me at least 30 minutes to get through these salads. Oh well, do your best and forget the rest…

My favorite part of the day was definitely dinner! I had millet for the first time which is really yummy! It reminds me of corn-flavored rice. I didn’t even flavor it with anything. If I had the choice, I would definitely choose millet over brown rice or quinoa. It’s very light and fluffy and full of flavor! I look forward to trying some different millet recipes when the Reset is over. The roasted root veggies were also very yummy. This was my first time eating a beet that didn’t come out of a can. I just peeled the beet like a potato. Not the easiest thing to do but luckily I just needed one! The zucchini-cashew soup wasn’t the greatest…but my friend told me it tastes better cold so I’ll try that tomorrow since it’s on the menu again at lunch.

I had to spend some extra time in the kitchen today because I had to get everything prepped and packed for lunch and dinner at work. Tomorrow will be the last day of tempeh for a while…and I’m grateful! Physically I still feel pretty good, I can’t say I feel a big burst of energy or anything. But then again, I didn’t experience the 12-14 hours of sleeping doldrums that many others in the test groups did…so that’s a plus! I think I’ve definitely accomplished a lot this week. Sooo many new foods and recipes that I’ve never tried before. 🙂
